When is the last time you cooked a meal for your family (and I’m not talking about one of the major meals) but a real for goodness sake home cooked meal. If you are like me, it has been a while. Between all the normal commitments and the holiday stress it has been a while since my family got to sit down to a meal I made. Oh sure, there may have been a couple of meals thrown together with whatever there was in the fridge so after the holidays have ended, I’ve been craving to get back in the kitchen.
I use to buy a new cookbook every year but with the advent of Pinterest my cookbook buying has slowed down. Recently I read in USA Today an article about The Pioneer Woman’s new cookbook. See the article here. USA Today couldn’t say enough nice things about The Pioneer Woman Cooks so I was intrigued. Plus Caroline told me about these awesome cinnamon rolls she and her daughter made for Christmas (find the recipe here), I decided I needed to put this on my purchase list.
Let me tell you what I think…I really like this cookbook. I’ve been watching the Pioneer Woman for a while but honestly never bought one of her cookbooks and I think I’m glad I started with this one. First, there are lots of pictures of not just the finished dish but of each step. Hello? That’s genius. Second, she gives me instructions on how to freeze ahead. Third she gives variations of each dish. For example if the dish originally calls for chicken but I’m all out of chicken, she lets me know that I can use shrimp if that is all I have in my freezer.
So here is what I’ve made so far…Tomato Soup with Parmesan Croutons; Ready to Go Taco Chicken; and Chicken Enchiladas and I can’t wait to try even more. As I get back into the groove of the new year, I plan on heating up my kitchen with The Pioneer Woman.
